Aji Dulce #2 - Capsicum chinense; Caribbean: Aji Dulce #2 is a prolific "chile dulce". Heatless, sweet and aromatic semi-blocky pods 1-1/2" ripening to a red. Medium flesh makes this variety perfect for salads, salsas and fresh consumption for the "faint of tongue" that love that habanero-like flavor.

Aji Dulce Yellow is a refreshing "chile dulce". Heatless, sweet and aromatic pods 1-1/2" ripening to a bright lemon yellow. Medium flesh makes this variety perfect for salads, salsas and fresh consumption for the "faint of tongue" that love that habanero-like flavor.

Aji Panca

This Peruvian favorite brings much to the table and more. Approximate 3 - 5" pods ripen to a deep red wine to brown on stocky plants. The Aji Panca offers a rich complex flavor of smoke and berries with little heat. Dries well on the plant under good conditions but may be harvest to air dry or in dehydrator. Folklore believes the Aji Panca is a tonic for the heart and stomach, a stimulant for circulation and digestion. Dry and grind to a rich powder, use in soups, soups and more. Origin - Peru NOTE: This seed is unique, very large & can be difficult to germinate. We have conducted germination test with success but can be very slow to germinate. Soak seed in warm water for 30 minutes before planting. You will receive extra seed for overseeding with Aji Panca.

Aji Limo Rojo

Aji Limo Rojo - Capsicum chinense: A regional favorite, a versatile variety of Peru. Approximate 2 - 3" pods grow on a large bush and ripen from green to orange to hearty red on a large plant. The thin flesh pods of medium hot heat will dry very well to be used in salas, ceviche, sauces, pickled or infusing vinegars, oils and liquors.

Aji Umba

Aji Umba - Capsicum chinense; Suriname: A rare variety, somewhat elongated blocky pods ripen from light green to orange to coral red, approximately 2 - 3" long. Quite flavorful for use in hot sauces, jerk marinades and smoke drying for a colorful powder.

A prolific variety, 2 - 3" pods ripen early to sunshine yellow on thick shrubby plants. Pods grow in various directions and are irregularly "waffled" or squiggley. Heat of 9 on the scale with a bright, crisp critrus flavor. Aromatic. Perfect for hot sauce or fresh consumption.

Aribibi Guasano

Also known as the Catapiller Pepper because of it's curious shape. Appox 1-1/2" pods ripen from pale green to light yellow to creamy white on a compact plant. Nice and hot with a very fruity flavor and aroma. A prolific producer! Great for fresh snacking, hot sauce, flavoring liquor or vinegar or a unique pickled gift.

A delightful "seasoning" pepper from Belize. Apporx 1" top-shaped pods ripen from lime green to red showing violet tinge sunny side grown on a low and branching plant. Very minimal heat and sweetness makes this variety excellent for adding unique flavor to salsas, salads and more. Origin - Belize

Beni Highlands

A beautiful variety that brings great aroma and a creamy citrus flavor to the chile kitchen. This heavy producer offers 2 - 3" pendent elongated teardrop pods with medium thin flesh, ripening from green to yellow-orange. We enjoy this in sauces, smoke-dried and fresh. Heat of 8-9. Origin - Bolivia

Bhut Jolokia - Ghost Pepper (12 SEEDS)

Bhut Jolokia, the King of the Super Hots. Approx 3-4" pods ripen for firey orange red with a distinct display of bumps typical of the Super Hots. Slice this bad boy open and fine a wraparound of placenta literally oozing with capsaicin droplet. Very tasty before and during the wall of fire that will make you cry. Can be difficult in containers but this long seasoner loves the warm earth garden. LIMITED AVAILABILITY - 12 SEEDS

Black Congo

The Black Congo may not ripen to true black but to a dark creamy chocolate brown. Pods are slightly elongated and blocky at approx 2" and grow on a shrub-like plant. Hot with rich, smokey flavor and aroma. Use your imagination to process the bad boyz!

Cachucha (An Aji Dulce)

Cachucha translates to "little hat". Mild. Shapely pods are 1-2" long by 1-1/4" wide grow pendent. Medium-thin flesh pods ripen from light green-pale yellow-orange. Sweet, fruity flavor & aroma of the Habanero sans the heat. Salsas, hot sauce, salads, jams for the "mild" at heart. Common in Puerto Rico & Cuba for Sofrito. One of our favorite "dulce" habs.

A very impressive producer bearing oblong approx 2 - 3 pods on a bushy plant. Pods ripen from light green to coral to red with tinges of violet on the side facing the sun. Crisp, bright flavor and aroma with a heat of 7 - 8 comes with these meaty pods. Many uses for this variety...hot sauce, salsa and fresh from the garden. An excellent subsitute for "jalapeno" poppers. Origin - Peru

Tasty, aromatic teardrop morsels grow pendent on smaller shub-like plant. Pods ripen from light white/yellow to a coral red with a medium heat. Prolific so plenty of these yummies for fresh bites and to process in salsas and sauces. One of our new favorites! Origin - Brazil

Habanero, Chocolate: The Chocolate Habanero is packed with rich flavor and aroma ripening from green to a deep brown but with approx 2" bulbacious HOT pods. Very Hot....plenty of heat and awesome flesh color make this smoky, flavorful pod versitile for fresh, hot saues and dried uses.

Congo Brown is a workhouse producer of firey hot 2" slightly elongated pods that ripen from dark green to a reddish-brown. Very hot at about 9. This variety was a surprise container performer, a great "chocolate" for the patio or balcony.

Congo Trinidad: Very Hot-9/10. 2" ribbed pods grow pendent and ripen from green-yellow/orange-red and will have all colors on pod at once. Unique fruity flavor balance with the heat. Extremely aromatic! From Trinidad. Cumari: These small pea size (.3") pods grow on a branching shrub like plant. Very prolific. Extremely aromatic and very fruity...similar aroma as "Fruit Loops" cereal. Hot 9/10. Excellent used fresh for salsas and sauces and flavoring vinegar and ligour. You'll get tired of picking these bite size morsels of heat. Habanero - Peruvian White

Habanero - Peruvian White: These wonderful pods ripen from lime green to whitish to a slightly yellow on a small to medium plant. About the size of a .380 bullet or approximately 1" with a squared apex. Extremely hot and aromatic with a fruity taste and 9/10 heat. Little heat poppers for hot sauces, salsa and salads. Use your imagination! A 2004 & 2005 Customer Favorite, ours too!

Habanero - Red

Habanero - Red: Very Hot-10. 2" slightly ribbed/wrinkled medium-fleshed fruit ripen from green a vibrant red. Pods are prolific and grow pendent. Slightly different flavor from the Orange Habanero, just as hot, a little more fruity. Hot sauce, marinades, salsas, chutneys, cookies and smoking, of course! Use anyway you can dream!
