Aji Amarillo: These flavorful and aromatic pods ripen to a beautiful sunset orange and grow to 4-6" on a large plant. Hot 7/8. Prolific. The Ají Amarillo is the standard for chile in Peru and is excellent drying, pickling, and many fresh uses. A real "workhorse" variety! Origin - Peru

A lovely and productive Aji, very sweet with medium heat. Pods to 4" ripeing to bright red. Plants grow large and branching and one of the earliest producers of the C. baccatum var pendelum species. A very pleasing Aji, super for fresh consumption.

AJI CHINCHI AMARILLO: A wonderful, smaller version of the Ají Amarillo. Smaller pods, approx 2-3", with the same aromatics, flavor and heat. Shorter season and cool temperature tolerant. Ripens from green to golden yellow. A super producer. Origin - Peru

Aji Cristal

Aji Cristal: Another great baccatum producer.  Elogated pods grow to approximately 4", ripening from pale white/yellow to orange to red orange. Plant growth habit is large and branching and may need staking from over load.  Aromatic and flavorful, especially when not fully ripe. Almost a "sweet grapefruit" like flavor. Fruity heat (8) and crisp medium flesh makes this pod perfect for fresh consumption, most flavorful when green, an unusual trait for this species. Origin - Chile

Aji de la Tierra - Capsicum baccatum: An unknown C baccatum we had the chance to harvest from field and have grown for several a couple but finally found our photos. This constant producer has brought year round pods in Zone 9 on a mounding shrub-like plant. Pods are 2 - 3", medium heat with sweet taste and aroma. The pods dry very well on their own or may be harvested for fresh consumption in recipes, on salads or for sauces or powders. We are proud to introduce this sleeper believe to be a USDA accession. Aji of the Land...

The Pumpkin is a sweetheart. Approx 1" flattish pumpkin pods ripen from dark green to vibrant red on a branching plant. Crisp, arotic flesh bring on the wonderful heat and aroma typical of the C baccatum species. It's a beauty!

Bulgaria PI439370

This USDA acession was originally collected in Bulgaria, surely not native. This unique character of this pod is it very obvious apex. Pods ripen from pale cream to coral orange red, approx. 1" diameter, grows well in a container. The flavor and medium hot heat typical of the C baccatum, Very productive on a shrubby plant. A pod of character!

Earbob PI159272

Earbob is what we call this one: Wonderful fleshy pods spring upright from branching plant, then flop pendent from the weight. Thick ovate/round pods that remind us of the 60's earrings (Earbobs) ripen from green to bronze to red, approx 1"+. Crunchy, aromatic, sweet flesh with moderate heat in the ribs. A very wonderful C baccatum, a Peppermania fav!

Guampinha de Veado

A semi-wild variety from the cattle country of Campanha region of Brazil. Pods grow to 1-1/2 - 2" X 3/8" and ripen to a vibrant red. Given the opportunity, this variety can grow to a large bush. A nice biting heat and the sweetness of the C baccatum in addition to drying very well makes this a versitile representative of the species. It is resilient and forgiving to most conditions and for those in the shorter grow seasons, the shorter "time to ripe" makes this an excellent option to grow the lovely C. baccatum species.

PI199506 Guyana previously Bird's Eye as the USDA local name: This sprawling plant bears elongated pendent fruit 4-6" ripening to from green to a sunshine yellow. Very tolerant of container growing for such a large branching plant. Very productive. Crisp medium flesh, aromatic with moderate heat makes this one excellent for fresh consumption, salads and salsas. Origin - Guyana

This is one of the hottest C baccatums with have tasted. Approximate 3 - 4" pods with a blunt apex ripen from green to orange and packed with a the wonderful strong flavor and aroma typical of the species and backed up with a punch of heat. These pods make an excellent variety for hot sauce, salsas, pickling, grilling and smoking and drying for powder and flakes. We know little of the origin of this wonderful C baccatum var pendulum variety except if is one of our ffavorites. Approx 3-4" fruit ripen from green to red. Very juicy and sweet with little to no heat and a medium thick flesh. Many uses but best when eaten "fresh off of the vine". Origin - Peru

Lemon Drop: We cannot say enough good things about the one! Besides being a true workhorse, 2 - 3" pods have a wonderful lemony, citrusy taste and aroma on a medium size plant. Ripens from green to lemon yellow. Grows VERY well in containers and will continue to produce when overwintered properly. Heat 8/9. Prolific. There is no limit to what you can do with the Lemon Drop!!! An obvious FAVORITE! Origin - Peru

WOW is what we have to say about this beauty. Multiitude of pods ripening from cream to coral to red, all with shades of purple grow erect on this shrub like plant. Medium heat and sweet aroma and flavor. An early and prolific producer, very content in a container. These colorful pods are super for fresh picking, unique garnish and make a beautiful jar of pickled peppers. Origin - Brazil
