Alma Paprika

The sweet, slightly "peppery" Hungarian pepper is grows in clusters on a semi-compact sturdy plant. Alma translate to apple in Hungarian and paints a picture of the pods that ripen from whitish - orange - red. This varieties is perfect for drying & grinding for flavorful paprika, especially smoked. Eat fresh, pickle or can for stews and sauces.

Broome Chilli

The elusive Broome chile of Australia; many have sought this rare chile of Australia and it's true species hence "elusive". Dark green pods grow to approx 4" L X 1" W with 'snub nose" and ripens to satin deep red. Sturdy plant can grow large, great producerl. Hot and dries well. A collector's variety for a Chilehead that wishes to grow chiles from all continents.

Chilaca - Pasilla

Pasilla also Chilaca: One of the "holy trinity" chiles in preparing mole. Long - up to 10" ripening from deep green to deep chocolate brown, near black or "negra" . These pods are best dried and dry very well, acquiring a deep rich smokey flavor with minimal heat. Consider smoking these beauties!

Chile de Arbol

We consider the de Arbol to be the Mexican cayenne. One of the hottest C annuum Mexican chiles. Fairly tall branching plants bear slender fruit approximately 3 - 4" long ripening to a muted red and drying to a dark red-brown. De Arbol means "treelike" and we will attest to this. Our first de Arbol lived for three years and grew to 8'+ with a canopy of a tree. It was beautiful to see red ripe pods hanging above the fence. So many uses for the Chile de Arbol...hot sauces, salsas, dried flakes, flavored vinegars and using with the milder Mexican chiles to bring some heat. The smaller pods are easy to string for ristras and wreaths. A must for the Cocina Mexicana!

Chile Negro de Arbol

This is an outstanding plant showing extreme pubescence on the stems and underside of leaves. Plant grows very erect, de arbol, lke a tree. Fruit grows erect, 3/8" X 1-1/2", ripening from black to green to red. A very hardy variety. Pods are hot (6 - 7) and dry well for powder and flakes. This striking variety will also fit into your landscape.

A very fine chile of Mexico, one of our favorites. Smokey and a bit "tangy", yet fruity and mild, thin flesh. Appox 4" elongated pods ripen from dark green to orange yellow. A must for the dishes of Mexico such as moles and sauces, use to add color and flavor to rice. Dries well.

Chilhaucle Rojo - Capsicum annuum: The RED chilhaucle, A Oaxacan. Approximate 3"-4" pods "heart-shaped" pods ripen to a beautiful red. Smokey sweet pods of medium thin flesh of low heat are early on a bushy shrub like plant. Very hardy and productive. Pods may be dried for mole and sauce, dry to powder for chili powder.  A Versatile Oaxacan Variety!

Chimayo - Capsicum annuum: An American heirloom originating in the mountains north of Sante Fe, MN. This beautiful variety produces 2 - 3" elongated pods with medium thin flesh and ripen to a deep red on prolific, stocky plants. Heat is mild yet variable throughout the season. Highly recommended for drying and grinding to a rich, sweet powder for many recipes.

A lovely pod of Oaxaca...ripens from green to orange-yellow, star-like blooms. Tapered pod appox 3" L X .5" W with a flavor of smoky citrus and medium heat. Dries well, with a bit of transparency. Branching plant is slightly pubescent. One of La Reina's favorites.

De Arbol Purple

DE ARBOL PURPLE: Hot, but tasty ornamental. 2-3" long, thin pointed pods; Thin flesh pendant pods ripen purple-green-red. Prolific. Foilage is mixed green, purple, white and lavender and varies with sunlight and new growth. Very attractive in the garden and in containers.

Flourescent Purple

FLOURESCENT PURPLE: Hot. Another beautiful addition to the garden. Purple/green leaves with splotches of white and flourescent purple (the more sun, the darker the leaves), bearing small elongated fruit to .75 - 1" that turn from purple/black to lime green to orange to red on a medium plant with semi-erect growth habit. Dries well. Very attractive and prolific!

Fresno - Capsicum annuum: While similar to the Jalapeno, the Fresno is often overlooked as a great kitchen variety from the garden. Approximate 3 - 4" elongated pods with a broader "shoulder", thinner flesh, a bit sweeter and slightly more heat than the Jalapeno are best when consumed Red ripe. Very productive on a shrub-like plant, these pods make an excellent variety for salsas, pickling, grilling and smoking and drying for chipotle.

GOAT WEED: Hot 8 - 9. Erect 1.5"- 2" fruit ripen from black to green to orange to red. Thin flesh. Silvery-green-grey pubescent (fuzzy) foilage and stems on very erect plant. Dries well. Pods have a deep biting heat. Really stands out in the garden, one we consider to be the most beautiful. A Most Handsome Variety!

Guajillo aka Mirasol

This chile of Mexico is the big brother of the Pulla. Because of its erect stem attachment, Guajillo is also known as Mirasol, "looking to the sun". The Guajillo is mild heat (1 -2) with the thin dried flesh bearing rich flavors of raisins and fruit, very aromatic. Pods are 5 - 6" X 1.5" and ripen to a deep red and the thin flesh dries to deep brown-red. Plants are approx 3' +, sturdy and best in well draining soil. Sun dry or dehydrate and grind to powder for season and chili or reconstituted for use create a paste or use in salsas and stews. An chile used for enchilada sauce or chili gravy. A must for the Cocina Mexicana!

HAWAIIAN SWEET HOT: Hot – 7/8. Smaller than a Jalapeno with rounder shoulders. A very pleasant sweet heat. Perfect for salsas, salads, pickling and fresh. Very productive! Limited Offering!

A cayenne type chile, 4 - 6" pods that grow prolific on a 2 - 3' shrub-like plant. When fresh, a bright red smooth chile with similar heat and a slightly thicker flesh than the Cayenne and is excellent for hot sauce. Similar flavor and heat to the cayenne. Pods air dry well to a dark shiney red and can be crushed for flakes or ground to powder for Cajun/Creole seasoning blends or adding heat to any dish. Also known as "Dutch".

A rare and unique variety of Mexico. Pods of heat are borne at various positions, often a little sideways to erect, at approx 1-1.5". Ripening from green to red and are very easily "plucked" from the calyx for an easy harvest. Foliage is slightly pubescent. Pods easily dry with a deep red transparency. One of our Favorites de Mexico!

A beautiful and productive heirloom cayenne-type pepper originating in Pennsylvania. Up to 10" wrinkled hot pods ripen on sturdy plant. Performs well in the North. A perfect pod for hot sauce processing and drying for "pizza flakes".

Mulato Isleno; Mexico

A rich and wonderful heirloom strain of the poblano originating in Mexico. Large heart-shape fruit ripen from deep green to chocolate redish brown on sturdy large plant. While possible for container planting, direct into the ground will bring best production. Mild heat. Great for roasting, stuffing and drying for a smokey, rich "ancho" dried and smoked for preservation and grinding for recipes such as chili, stews and soups.

A New Mexican variety, large Anaheim type. Pods grow to 6-8". Large fleshy pods with mild heat. Sturdy plants bearing large tapered pods. Ripens green-orange-red. Typically harvested green for roasting, grilling & chile verde. Let ripen to red for ristras and for drying for sweeter taste and powders for chili gravy and sauces.

This large "bulbacious" pods will remind tomato in appearance and the sweet, sweet flavor will have you eating them straight from the garden like an apple. They beat a bell pepper any day, espcially with their thick juicy flesh. 3" + pods grow prolically on stout and sturdy appox 2' plants. The Pimento is perfect for stuffing, dehydrating, slice & pickle or juice eat them from the vine.

A highly productive and proven hybrid. Mild. Wide shoulder, heart shaped fruit ripen from true green to vibrant red. The thick & sweet flesh fruit are perfect for fresh for salads, adding flavors to salsas and the never to be forgotten, Pimento Cheese Spread. An excellent addition to any garden! While Peppermania does not offer hybrids as a norm, we find this to be an outstanding variety for adding some "sweet" to the grow out list.
